Chicken + Crock-pot = Yum

I love using my crock-pot being a busy mom it helps to have dinner cooking while I'm at work. I came across a recipe for buffalo chicken I changed it a bit and put my own spin on it.

24oz of Franks Red Hot
1 packet ranch seasoning
2Tbs butter
4 frozen boneless skinless chicken breasts

Put all ingredients in crock-pot cook on low for 8 hours after 8 hours shred chicken and put back into crock-pot for at least 30 minutes.

I like to serve the shredded chicken on a sub roll with mozzarella sprinkled on top and my fiance and son likes to add ranch dressing as well.

Since this will produce a lot of chicken I get creative with other ways to serve this chicken. Here is another delicous way to serve this chicken.

1/2 pint heavy whipping cream
1/4 cup sour cream
1/4 cup mozzarella
2 cups of buffalo chicken
1/2 package of no yolks noodles

Mix whipping cream, sour cream & mozzarella in a pot heat until cheese is melted. Add chicken to mix. Cook noodles in separate pot per instructions on bag. After draining noodles add them to sauce pot and mix.
There were NO LEFTOVERS! I will be making this again.

Christmas break

Well it was nice to have almost 2 weeks off for Christmas. My fiance and I headed to Iowa on the 22nd to surprise his mom for Christmas. BOY was she surprised!We drove all the way to Iowa in ninja monkey footie pajamas.

It was great to spend the Christmas with her and the rest of the family. But, it was sooooo cold. We took sometime to head up north to Dubuque to go snowboarding. It was fun but left us both super sore.


 I hated to leave :-( but I know we will be back in June to visit.
